Waikiki Meatballs

Course Appetizer

Ingredients

  • 2/3 cup crushed saltine crackers
  • 1-1/2 lbs ground beef
  • 1/3 cup minced onion
  • 1 egg
  • 1/4 cup milk
  • 1-1/2 tsp ground giner
  • 1/2 tsp salt
  • 1 tbs olive oil
  • 1 tbs soy sauce
  • 1/3 cup chopped green bell pepper
  • 1-15 oz can pineapple chunks drained juice reserved
  • 1 jar Aloha From Oregon Pineapple Pepper Jelly

Instructions

  • In a large bowl, combine ground beef, cracker crumbs, onion, egg, milk, ginger, & salt.
  • Shape mixture by rounded tablespoonfuls into meatballs.
  • Heat olive oil in a large skillet over medium heat.
  • Place meatballs in skillet & cook until evenly browned & meat is no longer pink.
  • Drain excess fat.
  • In a small bowl, combine soy sauce, reserved pineapple juice & Aloha From Oregon Pineapple Pepper Jelly.
  • Heat in microwave for 1 minute, then pour into skillet with meatballs.
  • Cook, stirring constantly until meatballs are coated in pepper jelly mixture
  • Stir in the green pepper & pineapple chunks.
  • Heat through.
