Waikiki Meatballs
Course Appetizer
Ingredients
- 2/3 cup crushed saltine crackers
- 1-1/2 lbs ground beef
- 1/3 cup minced onion
- 1 egg
- 1/4 cup milk
- 1-1/2 tsp ground giner
- 1/2 tsp salt
- 1 tbs olive oil
- 1 tbs soy sauce
- 1/3 cup chopped green bell pepper
- 1-15 oz can pineapple chunks drained juice reserved
- 1 jar Aloha From Oregon Pineapple Pepper Jelly
Instructions
- In a large bowl, combine ground beef, cracker crumbs, onion, egg, milk, ginger, & salt.
- Shape mixture by rounded tablespoonfuls into meatballs.
- Heat olive oil in a large skillet over medium heat.
- Place meatballs in skillet & cook until evenly browned & meat is no longer pink.
- Drain excess fat.
- In a small bowl, combine soy sauce, reserved pineapple juice & Aloha From Oregon Pineapple Pepper Jelly.
- Heat in microwave for 1 minute, then pour into skillet with meatballs.
- Cook, stirring constantly until meatballs are coated in pepper jelly mixture
- Stir in the green pepper & pineapple chunks.
- Heat through.
