Spinach Pomegranate Salad

Ingredients

  • 1/4 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp Dijon mustard
  • 1/3 cup walnuts or pecans
  • 4 cups spinach
  • 1/2 cup goat cheese or gorgonzola
  • 1/4 cup plus 2 tbs Aloha From Oregon Pomegranate Pepper Jelly

Instructions

  • In a small bowl, whisk together Aloha From Oregon Pomegranate Pepper Jelly, olive oil, mustard & salt. Heat dressing in the microwave for 30 seconds; cool. Toss spinach, nuts cheese & dressing in a bowl.
