Ginger Pear Crisp

Course Dessert

Ingredients

Topping

  • 1/2 cup flour
  • 1/2 cup dark brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine sea salt
  • 1/2 cup chilled butter cut into 1/2 in. cubes
  • 1 cup old-fashioned oats
  • 1/2 cup coarsely chopped whole raw almonds
  • 1/4 cup Aloha From Oregon Crystallized Ginger

Filling

  • 1/2 cup sugar
  • 2 tbs cornstarch
  • 1/4 tsp fine sea salt
  • 1/2 tsp ground cinnamon
  • 4 lbs firm but ripe pears 6-7 large, peeled cored, cut into 1/2 in. cubes (about 6 cups)

Instructions

Topping

  • Whisk first 4 ingredients in medium bowl.
  • Add butter.
  • Working quickly so butter does not soften, run in with fingertips until moist clumps form.
  • Stir in oats, almonds, & Aloha From Oregon Crystallized Ginger.
  • Chill while preparing filling.

Filling

  • Preheat oven to 350° .
  • Whisk all ingredients besides pears in large bowl
  • Add pears; toss.
  • Transfer to 13x9x2 in. oval baking dish.
  • Sprinkle with topping over pear mixture.
  • Bake until topping is crisp & golden brown & juices are bubbling, about 50 minutes.
  • Serve warm.
