Skinny Pumpkin Muffins

Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 3/4 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 1 stick butter softened
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/4 cup milk
  • 3/4 cup Aloha From Oregon Pumpkin Butter w/ Port

Instructions

  • Whisk the flour, baking powder, spices, & salt. Set aside. Fit a regular muffin pan with liners. Preheat oven to 400° . Beat the butter until creamy, then beat in the sugar. Add the eggs one at a time, beating well after each. Gently fold in the Aloha From Oregon Pumpkin Butter w/ Port & milk. Add the flour mixture & blend into batter. Divide the batter into the muffin cups. Bake for 20 to 25 minutes.
