Recipe: Sweet and Spicy Coleslaw


 

Recipe Ingredients

1 small head of cabbage, grated or finely chopped
1 medium onion, finely chopped
2 medium carrots, grated                                                      1/3 cup sugar (put on top of cabbage, onions and carrots)


Sauce:
1/2 cup salad oil
1/3 cup vinegar
1-1/2 tsp. celery seed 
1 tsp. dry mustard
2 Tbsp. Aloha From Oregon Pepper Jelly (Habanero, Pineapple or Plum Ginger Thai are our favorites)




Recipe Instructions

In a pan over medium-high heat add all sauce ingredients, cooking until it starts to boil. Pour the sauce over the top of the cabbage, onion, carrots and sugar. Mix well.
Optional Additions: chopped green onions, cilantro, salted peanuts, and/or pineapple tidbits. (Sometimes we just melt the pepper jelly and pour it over the vegetables.)
