Recipe: Gingerbread Shortbread


 

Recipe Ingredients

1 cup butter softened
1/2 cup light brown sugar, firmly packed
1/2 tsp. ground ginger
2 cups all purpose flour
1/4 tsp. salt
1/4 tsp. vanilla
3/4 cup Aloha From Oregon Crystallized Ginger, chopped finely

Recipe Instructions

Preheat oven to 300. In a large mixing bowl cream together the butter, brown sugar and ground ginger with a mixer. Add the flour and salt, blending the flour until it is just combined. Mix in the Aloha From Oregon Crystallized Ginger.  You can roll these out between wax paper and cook on cookie sheets or pat into a 9 x 9 pan and bake like shortbread.
