Recipe: Waikiki Meatballs


 

Recipe Ingredients

2/3 cup crushed saltine crackers
1-1/2 lbs ground beef
1/3 cup minced onion
1 egg
1/4 cup milk
1-1/2 tsp ground giner
1/2 tsp salt
1 tbs olive oil
1 tbs soy sauce
1/3 cup chopped green bell pepper
1-15 oz can pineapple chunks drained, juice reserved
1 jar Aloha From Oregon Pineapple Pepper Jelly


Recipe Instructions

In a large bowl, combine ground beef, cracker crumbs, onion, egg, milk, ginger, & salt. Shape mixture by rounded tablespoonfuls into meatballs. Heat olive oil in a large skillet over medium heat. Place meatballs in skillet & cook until evenly browned & meat is no longer pink. Drain excess fat. In a small bowl, combine soy sauce, reserved pineapple juice & Aloha From Oregon Pineapple Pepper Jelly. Heat in microwave for 1 minute, then pour into skillet with meatballs. Cook, stirring constantly until meatballs are coated in pepper jelly mixture. Stir in the green pepper & pineapple chunks. Heat through.
